Toast’s payments page says its payments team creates a rate for each business, and its pricing page describes processing as a simple, flat rate without giving a number. Software is sold as monthly plans. Toast’s pricing page also describes Toast as a payment facilitator that partners with processors, rather than a processor itself.
Toast does not publish an in-person, online or keyed-in processing rate on its pricing page or its payments page. Ask Toast for its rate in writing.

Who Toast suits
Restaurants that want restaurant-specific point-of-sale software, hardware and payments from one company, and are comfortable with processing quoted as part of that arrangement.
Where interchange-plus is typically clearer
For a business with steady or growing card volume, interchange-plus usually makes the statement easier to audit: interchange and network assessments are passed through at cost and the processor margin is one stated line on top. When costs move, you can see whether it was the card mix or the processor.
Whether it costs less depends on your card mix, your average sale and the margin you are quoted, which is why VitaPay quotes in writing against your own statement rather than publishing a headline rate.

When Toast may be the better fit.
If you run a restaurant and want one company for the menu, the kitchen screens, the handhelds and payments, Toast’s restaurant-specific system may matter more to you than how the processing line is priced. In that case, ask for the processing rate in writing and compare it with your current statement as you would any other quote.
